Ingredient List:
• Boiled chicken (cut into small cubes): 1 pound
• Chopped celery: 1 cup
• Red grapes (halved): 1 cup
• Dried cherries: ½ cup
• Chopped roasted pecans: ½ cup
• Greek Yogurt: 1 cup
• Salt: ½ tsp.
• Black pepper (ground): ½ tsp.

Instructions: Take a bowl and add chicken, dried cherries, pecans, grapes, salt, pepper and yogurt in this bowl. Mix them well and add celery leaves. Stir them together to make a uniform blend. Serve it chilled.

Pasta Salad with Chicken and Fruits

• Macaroni: 2 cups
• Cooked chicken cubes: 1 cup
• Ranch dressing: ¼ cup
• Dijon mustard: 1/8 cup
• Dill weed (dried): ½ tsp.
• Grated parmesan cheese: ½ tsp.
• Apples: 1 cup
• Orange parts: 1 cup


Cook macaroni as per the directions given on the package and keep it aside. Take a mixing bowl and mix Dijon, ranch, chicken, dill, and fruits together. Add pasta and mix them well. Finally, add parmesan and serve hot or keep in a refrigerator for a couple of hours.

• Grilled Chicken (thinly sliced): 1 breast
• Spinach and arugula greens: 6 cups
• Raspberries: 1/3 cup
• Blackberries: 1/3 cup
• Blueberries: 1/3 cup
• Sliced strawberries: 1/3 cup
• Walnuts: 1 cup
• Brown sugar: ¼ cup
• Water: 1 Tbsp.
• Garlic salt: ¼ tsp.
• Pepper: ¼ tsp.
• Sugar: 3 Tbsp.
• Fresh limes to squeeze juice: 3
• Salt: 1 tsp.
• Ground mustard: 1 tsp.
• Red onion: ¼
• Olive oil: 1/3 cup

• Poppy seeds: 1 Tbsp.
• Mayonnaise: 2 Tbsp.

Instructions: Take a bowl and add chicken, berries and green leaves. Mix them and set aside. Take a saucepan and add garlic salt, pepper, brown sugar, water and walnuts. Mix them constantly on medium heat to dissolve sugar and let them bubble.Once it starts to caramelize, you can transfer walnuts to one piece of baking or parchment paper and let them cool. Put leftover ingredients in a food processor or blender. Process them well to make a fine puree. Assemble salad by mixing berries and green leaves together with walnuts. Top this salad with puree and serve.

Curry Chicken Salad

Serve this salad with boiled or grilled chicken as per your convenience. Your family will surely like its unique taste.

Ingredient List:

• Boiled or grilled chicken breast (cubes): 2 cups
• Red grapes (halved): ¾ cup
• Diced celery: ½ cup
• Diced golden apple: 1
• Chopped and toasted pecans: ½ cups
• Crushed pineapple: 3 Tbsp.
• Golden raisins: 1/3 cup
• Chopped green onions: 4


• Greek Yogurt or mayonnaise: ¾ cup
• Soy sauce: 1 Tbsp.
• Curry powder: 1 ½ tsp.
• Ground pepper: 1/8 tsp. Serving:
• Butter Lettuce Leaves

Instructions: Take a medium bowl and put salad ingredients in this bowl. Keep it aside. Take a small bowl and whisk all dressing ingredients. Pour this dressing over salad ingredients and mix them well. Keep in a refrigerator before serving and at the time of serving, scoop salad on lettuce leaves. You can also spread it on a slice of bread to serve as an open sandwich.

Chicken Fruit Salad with Cheese

This fruit salad is special for goat cheese, fresh fruits and raspberry dressing. Serve with flax or poppy seeds.

Ingredient List:
• Italian Salad greens: 6 cups
• Grilled Chicken (breast strips): 2 cups
• Blueberries: 1 cup
• Strawberries (quartered): 1 cup
• Sliced banana: 1 cup
• Sliced Kiwifruit (peeled): 1 cup
• Toasted pine nuts: 2 Tbsp.
• Goat cheese: 2 Tbsp.

Raspberry Dressing
• Honey: 1/3 cup
• Raspberry vinegar: ¼ cup
• Fat-free yogurt: ¼ cup
• Dijon mustard: 1 Tbsp.
• Olive oil: 2 tsp.
• Salt: ¼ tsp.
• Black pepper: ¼ tsp.

Instructions: Take 4 plates and arrange salad greens on plates. Equally divide remaining ingredients among four plates except raspberry dressing. Drizzle this dressing on each plate (3 Tbsp. per plate) and serve chilled. Note: Combine all raspberry dressing ingredients in a jar to make the dressing.
